West African Fortified Parboiled Unpolished Rice Recipe Development Project

As part of our commitment to improving child nutrition using culturally appropriate solutions, Impact Nutrition Africa Initiative (INAI) partnered with TechnoServe to implement the WAPUR Recipe Development Project in Kano, Ogun, and Osun States.

The project focused on creating nutritious, affordable, and easy-to-prepare recipes using Parboiled Unpolished rice (PUR), a nutrient-dense alternative to commonly consumed rice varieties.

Key activities and achievements:

  • Desk Review: We conducted a detailed review to understand food preferences among children in the three target states.
  • Recipe Development: Our team created 8 original recipes using Parboiled Unpolished Rice (PUR) and locally available ingredients.
  • Culinary Testing: Initial tasting sessions were held to refine the recipes based on flavor, texture, and cultural relevance
  • Nutrient Analysis: Each recipe was assessed using ELSA food processor software and the Nigerian Food Composition Table to ensure it met recommended dietary allowances for children.
  • Recipe Selection: TechnoServe selected 5 recipes for inclusion in the final recipe book based on nutritional value and community acceptance.
  • Sensory Evaluation: A hands-on evaluation was conducted with local participants in Kano State to gauge appeal and taste preferences.
  • Recipe Book Design: We produced a visually engaging recipe book featuring step-by-step instructions, ingredients, measurements, and preparation methods.

The WAPUR project showcases our expertise in nutrition-focused innovation and our ability to co-create solutions that promote healthy eating habits among children across diverse Nigerian communities.
